Yes I did shoot it with one hand. The bike was in 4th gear, and the speed varied from 40-80kph. It was kinda difficult for the cam to be held and especially clickin the start/stop button on the top-most right corner.
But fun nonetheless.
I have been thinking of some better ways to do this. Will post them up soon.

SO you had the cam clamped on or something or a very steady pillion?
What I would have added is a few more angles added in. yes you would need to break the rides very often (arrrgh!) but the end effect would ve been great.
